Ingredients

  • 300 grams watermelon rind, peeled and cut into bite-sized pieces
  • 100 ml rice vinegar
  • 100 grams sugar
  • 2 teaspoons salt
  • 1 teaspoon soy sauce
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. In a bowl, combine the sugar, salt, and red pepper flakes (if using). Add the watermelon rind pieces and toss until they are well coated.
  2. Let the mixture sit for about 30 minutes to draw out moisture from the rind.
  3. In a saucepan, combine the rice vinegar, soy sauce, and grated ginger. Heat over medium heat until the sugar is dissolved.
  4. Add the watermelon rind to the saucepan and simmer for about 20 minutes, until the rind becomes translucent.
  5. Remove from heat and let cool to room temperature before transferring to a jar.
  6. Refrigerate for at least 2 hours before serving. Serve cold, garnished with sesame seeds.
