Recipe: 'Japanese watermelon rind'
Ingredients
- 300 grams watermelon rind, peeled and cut into bite-sized pieces
- 100 ml rice vinegar
- 100 grams sugar
- 2 teaspoons salt
- 1 teaspoon soy sauce
- 1 tablespoon grated ginger
- 1 teaspoon red pepper flakes (optional)
- 1 teaspoon sesame seeds (for garnish)
Instructions
- In a bowl, combine the sugar, salt, and red pepper flakes (if using). Add the watermelon rind pieces and toss until they are well coated.
- Let the mixture sit for about 30 minutes to draw out moisture from the rind.
- In a saucepan, combine the rice vinegar, soy sauce, and grated ginger. Heat over medium heat until the sugar is dissolved.
- Add the watermelon rind to the saucepan and simmer for about 20 minutes, until the rind becomes translucent.
- Remove from heat and let cool to room temperature before transferring to a jar.
- Refrigerate for at least 2 hours before serving. Serve cold, garnished with sesame seeds.
