   Ingredients: 200g bacon, chopped, 1 large onion, finely sliced, 50g butter, 1 ripe avocado, diced, 100g cooked ham, diced, 200g sweet corn (canned or frozen), 50g cornflakes, 30g raisins, 50g almonds, sliced, Salt and pepper, to taste, Fresh parsley, for garnish

Ingredients

  • 200g bacon, chopped
  • 1 large onion, finely sliced
  • 50g butter
  • 1 ripe avocado, diced
  • 100g cooked ham, diced
  • 200g sweet corn (canned or frozen)
  • 50g cornflakes
  • 30g raisins
  • 50g almonds, sliced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a frying pan, melt the butter over medium heat.
  2. Add the chopped bacon and cook until crispy. Remove and drain on paper towels.
  3. In the same pan, add the sliced onions and sauté until they become translucent.
  4. Add the cooked ham and corn to the pan, stirring well to combine. Cook for about 3-4 minutes.
  5. In a large bowl, combine the crispy bacon, sautéed onion mixture, diced avocado, raisins, and sliced almonds.
  6. Season with salt and pepper to taste.
  7. Just before serving, gently fold in the cornflakes for added crunch.
  8. Garnish with fresh parsley and serve chilled or at room temperature.
