Ingredients
- 200g bacon, chopped
- 1 large onion, finely sliced
- 50g butter
- 1 ripe avocado, diced
- 100g cooked ham, diced
- 200g sweet corn (canned or frozen)
- 50g cornflakes
- 30g raisins
- 50g almonds, sliced
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a frying pan, melt the butter over medium heat.
- Add the chopped bacon and cook until crispy. Remove and drain on paper towels.
- In the same pan, add the sliced onions and sauté until they become translucent.
- Add the cooked ham and corn to the pan, stirring well to combine. Cook for about 3-4 minutes.
- In a large bowl, combine the crispy bacon, sautéed onion mixture, diced avocado, raisins, and sliced almonds.
- Season with salt and pepper to taste.
- Just before serving, gently fold in the cornflakes for added crunch.
- Garnish with fresh parsley and serve chilled or at room temperature.
