Ingredients
- 240g all-purpose flour
- 120ml water
- 60g unsalted butter, melted
- 1 large egg, beaten (for egg wash)
- 1/2 teaspoon salt
- 200g minced beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium tomatoes, diced
- 1 green bell pepper, diced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine flour and salt. Add melted butter and water, kneading until a smooth dough forms.
- Wrap the dough in plastic wrap and let it rest for 15 minutes.
- In a pan over medium heat, cook the chopped onion and garlic until translucent.
- Add the minced beef and cook until browned. Stir in the tomatoes and bell pepper, and season with paprika, salt, and pepper. Let it simmer for 10 minutes until the mixture thickens.
- Remove from heat and let the filling cool slightly.
- Preheat the oven to 200°C (400°F).
- Roll out the dough on a floured surface until thin. Cut circles using a cookie cutter or a glass.
- Place a tablespoon of filling in the center of each circle. Fold and seal the edges with a fork.
- Brush the tops with beaten egg.
- Place empanadas on a lined baking tray and bake for 20-25 minutes or until golden brown.
- Garnish with fresh parsley before serving.
