Ingredients
- 4 large eggs
- 2 medium potatoes, peeled and thinly sliced
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 ripe avocado, sliced
- 1 ripe banana, sliced
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a non-stick frying pan over medium heat.
- Add the sliced potatoes and onions to the pan. Cook until the potatoes are tender and golden, about 10 minutes. Stir occasionally to prevent sticking.
- In a bowl, beat the eggs and season with salt and black pepper.
- Once the potatoes and onions are cooked, reduce the heat and pour the beaten eggs over them. Let it cook for about 5 minutes until the eggs start to set.
- Using a plate, carefully flip the tortilla to cook the other side. Slide it back into the pan and cook for another 5 minutes.
- Once fully cooked, transfer the tortilla to a serving platter.
- Layer the sliced avocado and banana on top of the tortilla.
- Garnish with fresh parsley before serving.
