Ingredients

  • 4 large eggs
  • 2 medium potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 ripe avocado, sliced
  • 1 ripe banana, sliced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a non-stick frying pan over medium heat.
  2. Add the sliced potatoes and onions to the pan. Cook until the potatoes are tender and golden, about 10 minutes. Stir occasionally to prevent sticking.
  3. In a bowl, beat the eggs and season with salt and black pepper.
  4. Once the potatoes and onions are cooked, reduce the heat and pour the beaten eggs over them. Let it cook for about 5 minutes until the eggs start to set.
  5. Using a plate, carefully flip the tortilla to cook the other side. Slide it back into the pan and cook for another 5 minutes.
  6. Once fully cooked, transfer the tortilla to a serving platter.
  7. Layer the sliced avocado and banana on top of the tortilla.
  8. Garnish with fresh parsley before serving.
