Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup coconut oil
- 3/4 cup warm water
- 2 cups cooked and shredded chicken
- 1/2 cup diced pineapple
- 1/2 cup cooked and mashed sweet potatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon soy sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a mixing bowl, combine the all-purpose flour and salt. Add coconut oil and mix until crumbly.
- Slowly add warm water to the flour mixture while kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 20 minutes.
- In a pan, heat a tablespoon of oil over medium heat. Sauté the onion, garlic, and ginger until the onion is translucent.
- Add shredded chicken, diced pineapple, mashed sweet potatoes, soy sauce, cumin, coriander, and black pepper. Mix well and cook for 5-7 minutes. Allow the filling to cool.
- Divide the dough into 12 equal balls. Roll each ball into a thin oval shape.
- Cut each oval in half. Take one half, form a cone, and seal the edge using a little water.
- Fill the cone with the chicken and pineapple filling, and seal the top of the cone by pinching the edges together.
- Repeat with the remaining dough and filling.
- In a deep pan, heat vegetable oil over medium heat. Fry the samosas in batches until golden brown on all sides.
- Remove and drain on paper towels. Serve hot with dipping sauce.
