Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil
  • 3/4 cup warm water
  • 2 cups cooked and shredded chicken
  • 1/2 cup diced pineapple
  • 1/2 cup cooked and mashed sweet potatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the all-purpose flour and salt. Add coconut oil and mix until crumbly.
  2. Slowly add warm water to the flour mixture while kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 20 minutes.
  3. In a pan, heat a tablespoon of oil over medium heat. Sauté the onion, garlic, and ginger until the onion is translucent.
  4. Add shredded chicken, diced pineapple, mashed sweet potatoes, soy sauce, cumin, coriander, and black pepper. Mix well and cook for 5-7 minutes. Allow the filling to cool.
  5. Divide the dough into 12 equal balls. Roll each ball into a thin oval shape.
  6. Cut each oval in half. Take one half, form a cone, and seal the edge using a little water.
  7. Fill the cone with the chicken and pineapple filling, and seal the top of the cone by pinching the edges together.
  8. Repeat with the remaining dough and filling.
  9. In a deep pan, heat vegetable oil over medium heat. Fry the samosas in batches until golden brown on all sides.
  10. Remove and drain on paper towels. Serve hot with dipping sauce.
